EASY GLUTEN FREE MACARONI AND CHEESE MAC

What pasta makes the best gluten free mac and cheese? You should be able to have a homemade version that no one–and I mean not one single soul–should be able to detect as any different than traditional. Instead, indulge in a version that’s truly creamy (almost too creamy for me but we’ll get to the tweaks in a second) and free from that curdled “there’s an egg in this” appearance a lot of baked versions have.

Not only do they not taste great, they are still full of preservatives, additives and flavors we don’t need. If you’ve tried to buy a good gluten free mac and cheese at the store, your options have been mostly pre-packaged foil squeeze pouches over gluten free noodles or something frozen and they are all–eh. I’ve been making this variation of my most popular baked mac and cheese for years so get ready to celebrate everything you love about this homemade classic made just for you.

  • Add the brie and as much cheddar as you want (I only personally added the equivalent of a few slices) and keep on cooking, stirring constantly, until it’s all melted.Craving gluten free mac and cheese? There’s no reason to miss out on the just because you’re skipping gluten.
  • Make sure it’s just about bubbling, but not actually boiling, to prevent the milk from curdling.
  • Turn the heat down to low, add the milk, stock, tomato paste and mustard and lightly simmer for a few minutes.
  • Add the salt, black pepper, oregano and nutmeg and keep on frying briefly.
  • Turn the heat down to medium/low and add the onion and garlic.
  • Pan fry the cherry tomatoes in olive oil on medium heat, squashing them with a spoon, until they start breaking down.
  • Meanwhile, finely chop the onion and garlic cloves, slice the cherry tomatoes in half, cut the brie into small cubes and grate some extra mature cheddar cheese.

    😉Īnd so this brings me onto this nice little discovery I made in Morrisons a few days ago: gluten free macaroni!! 😀 I’m sure some of you remember Heinz had some a few years ago, as well as other pasta, but they eventually disappeared from the shelves and never came back. But now we’re so spoiled that we get to moan about the lack of pasta shapes and that can only be a good thing.

    And those who went gluten free even before me know this all too well (and are probably shouting at the screen “2010 was actually a really good time to be gluten free in comparison to the 80’s!”).

    Let’s just say we’ve come a long way since then, in just under 10 years. haha Because you see, at the time the free from section was really not what it is today in 2017. In fact this was around the time that Genius released their first fresh gluten free bread and everyone was raving about it and how revolutionary it was. Like the gluten free world had just set sail for new exciting horizons. I know if my newly gluten free self could hear this, she would probably feel the urge to slap me… because not only did we not have a large variety of pasta shapes back then, but we barely had gluten free pasta (or gluten free anything!) full stop. When I first went gluten free, I never thought I would moan about this, but who else misses having a variety of pasta shapes? In the gluten free world, It seems there’s rarely anything beyond fusilli, penne and spaghetti… and I know it may sound a bit silly because ultimately they all taste the same, but they do add a different feel and texture. 🙂įeaturing: Morrisons gluten free macaroni And I love adding tomatoes for extra flavour (and nutritional goodness).
